Healthy and tasty diet in school meals with a focus on salt and flavorings

My bachelor thesis is called "Healthy and tasty diet in school meals with a focus on salt and flavorings". The production of more and more processed food and change of a lifestyle change eating habits. The population consumes more energy-dense foods with a high content of saturated fat, trans-fatty acids, sugars and salt. Salt is main source of sodium and its consumption is connected with hypertension and increased risk of heart diseases. The thesis is divided into two parts - theoretical and practical. In the theoretical part I deal with school feeding programs for children of age 11 to 15. I focus on basic nutrients, nutritional recommendations and above all on salt and flavourings. For practical part I have chosen as a first goal to find out if the meals are balanced and evaluate the quality of food. Another goal is to find out if the employees in school canteens have proper information about salt and flavourings. The last goal was to focus on children and their satisfaction with the meals through questionnaires. The result of practical part showed that meals are often oversalted, insufficient to satiate and does not look interesting.
How school meals work in the Czech Republic in the 21st century in terms of raw sobriety

This bachelor thesis is called "How school meals work in the Czech Republic in the 21st century in terms of raw material sobriety". Eating habits are developed from an early age. Of course, family background is a big part of this, but the school environment also plays an equally important role in shaping dietary habits. The theoretical part deals mainly with nutritional recommendations for school-age children, other recommendations in nutrition and with the food pyramid. It also discusses the importance of school meals, its history, legislation and, last but not least, the HACCP system and the principles of good manufacturing and hygiene practice. A total of 8 informers were involved in the research part, of which 2 informers were the heads of the examined school canteens in Písek, the remaining informers were the cooks there. A qualitative method was applied to collect the data using semi-structured interviews, observations and analysis of the documentation. For the practical part, 3 goals were chosen. The first objective was to focus on the suppliers of raw materials, including the frequency of supply and the quality of provided raw materials. The second objective was to evaluate the processing the ingredients into tasty and nutritionally balanced meals. The last goal was to map the current state of food and nutrition in school canteens from the perspective of raw material modesty. The results revealed that the raw materials are ordered every day, the vegetables are delivered 2-3 times a week, the meat basically every day and the durables once a week. As the school canteens check the freshness of the delivered raw materials. If some raw materials come in poor quality, the manager will return them to the supplier. Neither of the examined canteens complied with all nutritional recommendations and thus the required nutritional parameters were not met. In terms of tastiness of prepared meals, the school canteen II achieved better results. However, it should be mentioned that the canteens differed greatly in the amount of leftovers. From the provided documents, it was found that they try to have simple recipes and use as few ingredients as possible. However, but seasonings and higher amounts of salt are still part of the recipes.

This bachelor thesis is focused on the eating habits of vocational high school students. The work consists of two parts, theoretical and practical. The aim of the theoretical part is to describe the diet of students in the school cafeteria and the specifics of adoles-cents’ diet, further to define terms such as consumer basket, veganism, vegetarianism, food allergies, food pyramid, etc. The methods used in the theoretical part are a review of scientific literature, creating notes, followed by their analysis and synthesis. In the practical part, the aim is to elicit the degree of satisfaction of students with the offer of food in the school cafeteria. We are also interested in aspects of the motivations of students to eat in the school cafeteria, whether they are satisfied with the choice of meals or what meals they would welcome, as well as what are the meal choices for stu-dents with special eating habits. A quantitative strategy and a questionnaire method were used. The questionnaire was designed for the purposes of our survey. The respond-ents are students of a selected high school in South Moravia. The results are presented in tables. The conclusion of the bachelor thesis contains the results, the literature used and appendices. Conclusions and draft recommendations for pedagogical practice are formu-lated.
Evaluation of morning snacks in pupils of the 2nd grade of selected elementary school

The diploma thesis is focused on snacks of older school-age children. The main objective of the thesis is evaluate the real snacks of children of the 2nd grade of elementary school that they had on a particular day at school. The partial objectives are to evaluate the frequency and proportion of snacks of children, to evaluate the energy balance of snacks of the children interviewed, to evaluate the procedure or course of preparation of children's snacks, to assess the nutritional status of respondents. The theoretical part presents and, above all, summarizes the knowledge about healthy eating of older school-age children. Nutrition is to ensure nutrients needed to sustain life activity, healthy growth and reproduction. Good healthy food can improve the quality and length of life. Positive effects intensify if the diet is combined with other elements of a healthy lifestyle: fresh air, physical activity, rest, avoiding toxic substances and a good mental state. In the Czech Republic there are changes in eating habits in the last 20th years. The food consumption was a major coup in the volume and in the structure. Changes occurred in the availability of food from seasonal to year-round became available in grocery stores are spread in our fast food intake, and thus the sweet soft drinks. The number of sedentary jobs and reduce the physical activity. Obesity is defined as weight gain above the physiological limits due to accumulation of fat reserves. Monitoring nutritional frequency in obese children and children with physiological weight

Nourishment plays a very important role in a proper children's development. A diet that is rich in a nutrition is necessary for an optimal physical and mental children's development. A number of children with obesity is constantly increasing, where the age of the child is decreasing. Children's obesity is mainly associated with unhealthy eating habits and lack of exercise. The purpose of the "Monitoring nourishment frequency in obese children and children with physiological weight" study is to determine the nourishment frequency in children with obesity and children with physiological weight. This study is divided into two parts; the theory part and the practical part, where in the first section of the theory part the researcher will discuss main characteristics of school-aged children and also outlines the results from previous studies focusing on school-aged children and their eating habits. The theory part will also focus on main nourishment basics, general principles and recommendations. In the second section the theory part will outline the current review on children's obesity. The practical part of this study used quantitative research technique in form of a questionnaire with aim to collect data regarding nourishment frequency in children. The researcher questioned a sample of 20 children that were divided into two equal samples. The first sample included 10 children with optimal weight according to the Body Mass Index (BMI) calculation and the second sample included 10 children with obesity issues that was also determined by the Body Mass Index (BMI) calculation. After data analysis the researcher determined that the main issues in children's obesity are irregular eating habits. Another factor that has significant influence on children's obesity was lack of physical exercise, where children prefer to spend their free time passively. Significant role plays also a fast food and soft drink consumption by children on a regular basis.
Annotated Translation - Vegetarian diet

The aim of this bachelor thesis is the translation of a German original text into Czech provided with a translation commentary. The translated text is an article published in 2011 in a German scientific journal Spiegel der Forschung n.28 (issue 1). The article deals with vegetarianism around the whole world and in Germany and tries to explain this diet to a wider audience. The translation commentary consists of a translation analysis of the original text, which contains a description of intertextual and extratextual factors based on Christiane Nord's theory. The thesis deals with translation methods, problems that occur during translation and their possible solutions based on the translation analysis. Use of nutrition "pyramid" in teaching health education projects

This thesis deals with the "pyramid" nutrition that is currently mostly used in teaching in primary schools. The aim of the study is to evaluate the possibilities of didactic use model "pyramid" nutrition teaching health education in primary schools and where appropriate, propose an updated form of "pyramid" diet, which all schools could benefit from harmonized or create a tutorial project that focused on nutrition pyramid. The theoretical part is written in the form of a literature review. It deals with the analysis of books and information about dietary recommendations in the form of a "pyramid" nutrition and analyzing textbooks, Framework curriculum and educational programs for elementary school students due to the use of a "pyramid" nutrition. The empiric part uses quantitative and qualitative methods. It focuses on the analysis of school educational programs at selected schools and another part is dedicated to exploring how elementary school teachers use the "pyramid" nutrition in teaching and what students have knowledge of the food pyramid.
